El Salvador El Ingenio

Originates within a UNESCO biosphere reserve in the Apaneca-llamatapec mountain range of El Salvador at an altitude of 1200-1800 metres. This ensures the coffee beans are SHG. The native Izote trees are used to shade the slow growing beans and grant the rainforest alliance certificate. They also provide shelter for 120 species of migrating birds. The coffee is harvested from December to March.

The coffee beans are hand picked, depulped, then undergo dry fermentation for 13-14 hours. Then they are washed again before being laid out on patios to dry.
