Colombian Swiss Water Decaf

Originates in the regions of Huila and Antiqiuia in the Western Andes of Colombia at a height of 1100-1900 metres. Here a co-operative of smallholder farmers ferment the beans before drying them on patios. They are fair-trade certified and exported according to their bean size and grade.

It has a sweet aroma, with a hint of honey and dark forest berries.

This coffee is best enjoyed from the fourth day after roasting.

Colombian swiss water decaf

The swiss water decaf method of removing caffeine is an organic, 100% chemical free method whereby a super saturated green coffee extract is introduced to a batch of green coffee. The only water soluble compound missing is caffeine, which subsequently diffuses from the coffee beans. All the other natural compounds containing the flavours remain inside the beans.

The coffee itself comes from the south west of Colombia from a variety of farms and is grown at a height of between 1000-1300m. It is harvested from October to January

It is a sweet coffee with excellent balance and acidity. It is full of flavour which is unusual for a decaf.
