It has a chocolate aroma, with mild acidity and fruity flavour.

This coffee is best enjoyed from the seventh day after roasting.

Peruvian Grade 1

Originates from high up in the Andes, ensuring a slow growth cycle where the fruit takes time to mature. This allows its flavour to fully develop. It has a cup rating of 83.5 and is wonderfully smooth.

It is triple certified and grown in organic soil, in fair-trade farms where the typical farm is between 2-5 hectares in size. The farmers have formed a co-operative several thousand strong, where they hand pick the beans in shaded jungle canopy that permits a rainforest alliance certification.

This coffee is grown at a height of between 1,200-1350 metres, is SHB (strictly hard bean) and is harvested from August to November, using the wet process method. This involves removing the outer skin of the cherry  from the bean, the bean with attached mucilage is allowed to ferment for a day or two in water, before further washing removes it. This process leads to a much fruitier flavour than dry processed beans.
